New Butcher Shop on McKnight to Feature Local, Kosher Meats

The manager of the new shop at 7777 McKnight Road said he hopes to open in the next few weeks.

A new butcher shop focused on providing local meats prepared according to Jewish dietary laws is set to open this month, according to its manager.

Jay Casa, who will be running the new shop, Mr. Butcher, at 7777 McKnight Road, said he hopes to open the 2,000-square-foot space to the public within the next two weeks.

"We're waiting for a final inspection," he said.

A supervisor at the Allegheny County Health Department confirmed that the permit is close to being issued.

Casa said the shop will feature livestock raised in Butler County, including chicken, lamb, goat and beef and that all meats will be prepared according to Kosher law.

This is the first retail shop Casa has run, he said in a brief phone interview with Patch.

He used to own a restaurant in Downtown Pittsburgh, Casa D'Positano, he said.

The owners of Mr. Butcher, whom Casa declined to name, are from New York, he said.
